Jeonnam Gwangju Metropolitan Office of Education Holds ‘Low-Carbon & Multicultural’ School Meal Culinary Academy

Approx. 140 Participants Including Nutrition Teachers and Cooks… Training Focused on Practical Oven Utilization and Eco-friendly Recipes

(Break News Jeonnam Gwangju) Reporter Lee Hak-su = The Jeonnam Gwangju Metropolitan Office of Education has set out to realize sustainable school meals (ESG) and strengthen practical capabilities for low-carbon and multicultural school meals. The Office of Education announced that it held a ‘Culinary Academy’ for school meal stakeholders in the Jeonnam region at Dongshin University from the 3rd to the 6th.

This training was designed to provide diverse and healthy menus to students based on creating a sustainable meal environment and understanding global food cultures. Approximately 140 field personnel, including nutrition teachers, dietitians, cooks, and culinary assistants, participated and completed the practical training.

The training program was composed of practical exercises with high applicability in the field, such as composing menus to reduce carbon emissions and sharing recipes that incorporate food cultures from around the world. In particular, the training received a positive response from participants by improving existing frying-centered cooking methods to reduce the workload of culinary staff, and by focusing on practical training in mass cooking techniques using ovens and the development of special sauces. Oven cooking garnered attention as an alternative that not only increases cooking efficiency but also reduces oil usage, thereby simultaneously safeguarding student health and the environment.

A school meal official who participated in the training commented, "The practical training on oven usage and special sauce development was of great help to my actual work," adding, "Based on this training, I will present even healthier and more diverse school meals in the second semester."

Koo Yong-hyeok, Head of the Physical Education and Health Division at the Jeonnam Gwangju Metropolitan Office of Education, emphasized, "School meals are more than just a simple meal; they are a form of education within daily life where one learns about the climate, the environment, and global cultures." He added, "We will continue to promote practical training that reflects the demands of the school meal field to create a high-quality meal environment that keeps pace with the changing times."
